BIO-261 Microbes and Food This course is to provide an overview of fundamental concepts in food microbiology, including microbial spoilage and microbial production of food, microbial control and food safety, foodborne illness and outbreaks, normal gut microbiota and diet, and risk assessment. The laboratory activities focus on basic microbiology techniques, making food with microbes, watching documentaries, and field trips. May Experience ONLY. 2 credits.
